“Leafy Lavender Salad”

Lavender (Practical Inspirations for Natural Gifts, Country Crafts and Decorative Displays) by Tessa Evelegh

2          cups mixed green lettuce leaves, such as lollo biondo, rocket, iceberg, round lettuce and lamb’s lettuce

1          tsp. dried lavender leaves, roughly chopped

3          tbsp. sunflower oil

1          tbsp. white wine vinegar

salt and ground black pepper

Wash and prepare the salad leaves.  Place the lavender leaves, oil, vinegar and seasonings in a screw-top jar and shake until well emulsified.  Toss the dressing over the salad leaves and serve.
