Recipe – “Mushroom and Scallion Soup”

“Mushroom and Scallion Soup”

½             cup butter

5              bunches scallions or green onions – yes, 5 entire bunches – chopped

1              teaspoon salt

1              teaspoon white pepper

5              cups chicken stock

1              pound mushrooms, thinly sliced

1-1/4       cups 18 % cream

4              tablespoons whipping cream, whipped

dash or cayenne pepper

 

Melt butter in a large saucepan.  Add onions, salt and pepper.  Saute for 10 minutes.   Add stock and bring to a boil.   Cover and simmer for 10 minutes.  Add half of the mushrooms and soak for one minute.  Puree in blender or food processor until smooth.  The soup may be frozen at this point.  Add cream and heat.  Drop in remaining mushrooms and cook slowly until tender.  Serve with a dollop of whipped cream and a sprinkle of cayenne pepper.  Serves 8 – 10.
