Recipe – “Old El Paso Tortilla Dip”

“Old El Paso Tortilla Dip”

1              can (14 oz.) refried beans, mashed

2 – 3       ripe avocados, chopped

3               tablespoons lemon juice

½             teaspoon salt

¼             teaspoon pepper

1               cup sour cream

½             cup mayonnaise

1               package taco seasoning

1               can (4 oz.) green chillies, drained and chopped

1               bunch green onions, chopped

2              medium tomatoes, chopped

1              can (13 oz.) pitted black olives, chopped

2              cups Cheddar Cheese, grated

Plain corn chips, or tortilla chips

 

Arrange beans in a large, flat serving bowl or platter to form first layer.  Combine avocados, lemon juice, salt and pepper.  Arrange over beans to form second layer.  Combine sour cream, mayonnaise and taco seasoning to make third layer.  Use green chillies for fourth layer.  Mix green onions, tomatoes and black olives for fifth layer.  Top with Cheddar Cheese.  Serve with several packages of chips.  Serves about 20.
